Eating healthy does not mean eating bland. I have come up with many different tastey recipes while transforming my body with a healthy diet and exercise. Below is today's featured recipe. Try it out or choose a different recipe from the left.


Shrimp with Chipotle Mayonnaise

1 can chipotle chiles in adobo sauce
1/2 cup light mayonnaise
1 1/2 Tbsp. fresh lime juice
1 1/2 pounds shrimp (cleaned)
2 tsp. olive oil
1/4 tsp. salt
1/4 tsp. black pepper

Stir together 1-2 tsp. adobo sauce, mayonnaise, and lime juice in a small bowel; set aside. Clean shrimp and pat dry to remove excess moisture.

Heat oil in a large nonstick skillet over medium-high heat. Add shrimp; sprinkle with salt and pepper. Cook (but don't over cook) shrimp until pink in color. Transfer to serving platter. Drizzle with chipotle mayonnaise.
