Eating healthy does not mean eating bland. I have come up with many different tastey recipes while transforming my body with a healthy diet and exercise. Below is today's featured recipe. Try it out or choose a different recipe from the left.


Steak Au Poivre

1 1/2 tsp. coarsely ground black pepper or peppercorns
2 (4-ounce) eye of round steaks
Cooking spray
1/4 cup brandy or 1/4 cup additional beef broth
1/2 cup fat-free, less-sodium beef broth
1/4 tsp. salt
3 Tbsp. light sour cream

Press peppercorns or coarsely ground black pepper onto both sides of steaks.

Coat steaks with cooking spray. Heat a non-stick skillet over medium-high heat. Cook steaks 4 minutes on each side or until desired degree of doneness. Transfer to plates, set aside, and keep warm.

Add brandy to pan; let simmer 30 seconds or until liquid is reduced to a glaze. Add beef broth and salt. Simmer, uncovered, 3 minutes or until liquid is reduced by half.

Remove pan from heat; stir in sour cream. Serve sauce with steak.
