Eating healthy does not mean eating bland. I have come up with many different tastey recipes while transforming my body with a healthy diet and exercise. Below is today's featured recipe. Try it out or choose a different recipe from the left.
Chicken Scaloppine
1.5 pounds boneless skinless chicken tenders
1/4 tsp. salt
1 tsp. black pepper
1/4 cup all-purpose flour
Cooking spray
2 tsp. olive oil
1 cup white wine
1 Tbsp. capers
Sprinkle chicken with salt and pepper; dredge in flour, and coat with cooking spray.
Heat oil in a large nonstick skillet over medium-high heat. Add chicken and cook 3 minutes on each side or until done. Remove chicken from pan and keep warm.
Add wine and capers to pan, stirring to loosen browned bits from bottom. Cook 4 minutes, adding chicken to pan after 2 minutes. Arrange cutlets on a serving platter, and drizzle with sauce.
